Working with Cookie Dough

It's best to cook your cookies as close to your event as possible but if thats not possible here are some tips for baking ahead of time:

Like any other cookie, it's all about the storage! Your cookies won't go 'off' as such but the texture can change based on how you store them. Always store them in an airtight container to keep them as fresh as possible.

If you bake, decorate and wrap your cookies in the cello bag with ribbon I recommend still storing them in an airtight container as tying the bag with ribbon isn't quite airtight.

You can also bake your cookies ahead of time and freeze them in an airtight container, pop a sheet of baking paper between each layer of cookies. They will last in the freezer for 3 months. DON'T freeze them  with fondant. Once defrosted cover with fondant.
